VEGGIE BURGER

This veggie burger is a wonderful choice for eating healthy. You do not have to be a vegetarian to eat veggie burgers. I suggest making veggie burger sliders until you get use to the taste. The nice thing about this burger is you can switch the taste culturally by add authentic flavors such as green chilies and cheese or Cajun spices.

Veggie Burger (Makes 8 regular size-16 sliders)

4 peeled and grated carrots 

2 grated celery stalks

1 grated onion

1/4 c minced red bell pepper

3/4 c minced mushrooms

8 minced scallions

2 lightly beaten brown eggs

1/2 c chopped pecans 

1 tbs chopped fresh thyme

2 minced garlic cloves

1-2 tsp sea salt

1 tsp Louisiana hot sauce

2 tsp sesame oil

1 tsp ground pepper

3c matxo meal

2 tbs olive oil

PREHEAT OVEN 475 

Combine all ingredients mixing thoroughly, accept matzo meal and olive oil. Add 1 cup of matzo meal to make firm but moist (add more if needed). Form burgers to desired size. Coat each burger with the remaining matzo meal. Place olive oil on a baking sheet with burgers. Bake in oven 4-6 minutes per side. Look 4 brown crisp edges.
